Need a boost of whole-food protein on the go? Juli Bauer’s chicken basil meatloaf minis do the trick. They’re simple to prepare and transport.

“They’re easy to pack with you, easy on-the-go—just mini patties or you can put them into a loaf and make a meatloaf,” says Bauer of

The recipe calls for ground chicken, garlic powder, onion powder, salt, pepper, fresh chopped basil, two eggs and almond flour.

Once the ingredients are mixed together by hand, golf-ball-sized portions go into a muffin pan with silicone liners.

Next, the pan goes into the oven for 20 to 25 minutes at 350 F.

“These are perfect,” Bauer says. “Throw ’em in a plastic bag and you can just take ’em to work with you, take ’em as a snack.”

Made this last night. Quick, easy and very tasty! My oven required about 10 extra minutes, but otherwise the ingredients were spot on. Well done.
